Guadalajara has been here since 1992, well before Hispanics became a significant minority in Hoover. The usual nachos, burritos and enchiladas are complemented by seafood and steak specialties, including a grilled snapper with creamy chipotle sauce, chicken in mole sauce, and Albanil steak with green sauce. Dishes are prepared mild; hot chipotle sauce is available upon request.

One of my favorites, especially the baked shrimp and roasted red pepper dish. Unfortunately, they stopped doing their Wednesday night buy 1 get 1 free, so it is not my automatic choice anymore. Hope they don't lose to many regulars by dropping that special. Good basic Mexican, and the medium size Margarita is HUGE! But opt for top shelf, as the regular taste like mix.
